Keto Chocolate Cake
For Two

With a fluffy whipped cream & No Sugar Raspberry Jam Filling, topped with Chocolate Ganache.

Ingredients:

1 2/3 CUP ALMOND FLOUR

1/3 CUP COCONUT FLOUR

¼ TSP SALT

2 TSP BAKING POWDER

1/3 TSP BAKING SODA

1/3 TSP COCOA POWDER

1 TSP XANTAN GUM

5 EGGS

½ CUP POWDERED ERYTHERITOL (DO NOT USE GRANULATED ERYTHERITOL)

1/3 CUP MELTED BUTTER (OR COCONUT OIL)

¾ CUP ALMOND OR COCONUT MILK

1 TSP LEMON JUICE

1 TSP PURE VANILLA EXTRACT


INSTRUCTIONS FOR CAKE LAYERS:

  • PREHEAT OVEN TO 350 F. SPRAY TWO 6” ROUND CAKE PANS WITH COCONUT OIL COOKING SPRAY. 

  • COMBINE FIRST SEVEN DRY INGREDIENTS IN A BOWL THROUGHLY WITH A FORK.

  • WHISK ALMOND MILK AND LEMON JUICE TOGETHER IN A SEPARATE BOWL.

  • WITH AN ELECTRIC MIXER (OR HAND MIXER) BEAT THE EGGS AND POWDERED ERYTHERITOL TOGETHER FOR 4-5 MINS ON MED-HIGH SPEED THEN ADD THE VANILLA EXTRACT AND MELTED BUTTER AND MIX AGAIN FOR 1 MINUTE.

  • ADD ½ THE DRY INGREDIENTS TO THE EGG MIXTURE ABOVE JUST ENOUGH TO COMBINE THEN ADD ½ THE MILK & LEMON MIX AND COMBINE. REPEAT UNTIL ALL THE DRY AND WET INGREDIENTS ARE FULLY COMBINED AND MIXED SMOOTH.

  • DIVIDE BATTER BETWEEN THE TWO PANS. BAKE FOR 25-30 MINS UNTIL A TOOTHPICK COMES OUT CLEAN FROM THE CENTER OF THE CAKE. TURN THE OVEN OFF AND LET THE PANS SIT IN OVEN FOR 10 MINS TO COOL.

  • CUT THE CAKES IN HALF WITH A SERRATED KNIFE HORIZONTALLY. YOU CAN MAKE TWO SEPARATE CAKES WITH TWO LAYERS OR ONE CAKE WITH FOUR LAYERS. UP TO YOU.

  • TURN PANS UPSIDE DOWN ON A WIRE RACK TO COOL COMPLETELY BEFORE ASSEMBLING CAKE LAYERS (SEE BELOW). 

INGREDIENTS FOR THE WHIPPED CREAM AND RASPBERRY FILLING:

1 CUP HEAVY WHIPPED CREAM (35% BUTTER FAT)

½ TSP PURE VANILLA EXTRACT

1 TBLS POWDERED ERYTHERITOL (DO NOT USE GRANULATED ERYTHERITOL)

2 TBLS COUNTY FARE’S NO SUGAR RASPBERRY LEMON VERBENA JAM

INSTRUCTIONS FOR FLUFFY WHIPPED CREAM FILLING:

  • COMBINE ALL INGREDIENTS IN A MEDIUM SIZED BOWL.

  • IN AN ELECTRIC MIXER BEAT CREAM ON MEDIUM FOR 5 MINUTES OR UNTIL THICK (PEAKS WILL FORM AS IT THICKENS).

  • LIGHTLY FOLD THE NO SUGAR RASPBERY JAM INTO THE WHIPPED CREAM.

INGREDIENTS FOR GANACHE:

2 OUNCE OF GOOD QUALITY UNSWEETEND CHOCOLATE CHOPPED ROUGHLY

¼ CUP HEAVY WHIPPED CREAM (35% BUTTER FAT)


INSTRUCTIONS FOR CHOCOLATE GANACHE:

  • PLACE CHOCOLATE IN A BOWL.

  • HEAT CREAM TO A BOIL.

  • POUR HOT CREAM OVER CHOCOLATE AND WHISK QUICKLY TO COMBINE.


CAKE ASSEMBLY FOR TWO CAKES TWO LAYERS:

  • FIRST SPREAD AN EVEN LAYER OF THE NO SUGAR RASPBERRY LEMON VERBENA JAM (ABOUT 1/8” THICK) OVER THE TOP OF THE BOTTOM CAKE LAYER USING A SPATULA TO SMOOTH IT OUT EVENLY.

  • NEXT SPREAD A GENEROUS LAYER OF THE WHIPPED CREAM AND JAM FILLING ON TOP OF THIS LAYER (ABOUT ½” THICK) AND AGAIN USE THE SPATULA TO SMOOTH THIS OUT EVENLY.

  • CAREFULLY POSITION THE TOP CAKE LAYER OVER THE BOTTOM LAYER.

  • POUR THE WARM GANACHE OVER THE TOP OF THE CAKE AND SMOOTH IT OUT EVENLY WITH A SPATULA. LET IT DRIP OVER THE SIDES OF THE CAKE.

  • GARNISH WITH FRESH RASPBERRIES. 


CAKE ASSEMBLY FOR ONE CAKE FOUR LAYERS:

  • SPREAD JAM ON EACH LAYER EXCEPT THE TOP LAYER AS DIRECTED ABOVE.

  • SPREAD WHIPPING CREAM/JAM FILLING ON EACH LAYER AS DIRECTED ABOVE.

  • CAREFULLY PLACE EACH CAKE LAYER EVENLY.

  • POUR THE WARM GANACHE OVER THE TOP LAYER OF THE CAKE AND SMOOTH IT OUT EVENLY WITH A SPATULA. LET IT DRIP OVER THE SIDES OF THE CAKE.

  • GARNISH WITH FRESH RASPBERRIES. 

  • ENJOY!

Austrian Holiday Cookies

Ingredients:

3/4 cup butter, softened

1 cup white sugar

1 egg

1 teaspoon lemon zest

2 cups all-purpose flour

3/4 cup blanched slivered almonds, ground

1 teaspoon ground cinnamon

1/8 teaspoon ground cloves

1 cup of your favourite County Fare No Sugar Jam

Instructions:

Preheat oven to 350F . Grease cookie sheet, or use parchment paper on cookie sheet.

In a medium bowl, cream together the butter and sugar. Beat in the egg and lemon peel. In a separate bowl, stir together the flour, almonds, cinnamon and cloves. Gradually stir the dry ingredients into the creamed mixture. If the dough is stiff, knead it by hand to get it to come together. Split the dough in half.

Roll out half of the dough on a lightly floured surface, and cut with chosen cookie cutter. Spread the jam over each individual cookie.

On a lightly floured surface, roll the remaining dough and cut with same cookie cutter. Then cut out middle of each piece with a much smaller cookie cutter. Lightly place each cookie over the jam on the previously cut cookies.

Bake 40 minutes or until top is golden. Cool in pan on wire rack.
